Esters of fatty acids

The term fat is applied to solid esters of fatty acids with glycerol (glycerides) if the fat is liquid at the ordinary temperature, it is conventionally called a fatty oil, vegetable oil or animal oil. The acids which occur most abundantly are palmitic ticid CH3(CHj),4COOH, stearic acid CH3(CH2)isCOOH and oleic acid CH3(CH2),CH=CH(CH2),C00H. Upon hydrolysis, fats yield glycerol and the alkali salts of these acids (soaps) ... 

The free acids are obtained upon acidification. Fata usually consist of mixtures of glycerides. The term wax is usually applied to esters of fatty acids with other alcohols such as cetyl alcohol CH3(CH2),4CHjOH and oleyl alcohol CH3(CHj),CH=CH(CHj),CH30H.

Fats and oils are one of the oldest classes of chemical compounds used by humans. Animal fats were prized for edibiUty, candles, lamp oils, and conversion to soap. Fats and oils are composed primarily of triglycerides (1), esters of glycerol and fatty acids. However, some oils such as sperm whale (1), jojoba (2), and orange roughy (3) are largely composed of wax esters (2). Waxes (qv) are esters of fatty acids with long-chain aUphatic alcohols, sterols, tocopherols, or similar materials. 

Chemical bleaching is never used on oils intended for edible use because it oxidizes unsaturated fatty acids to cause off-flavors. However, it does find wide usage for specialty linseed oil, for the paint industry, and fatty chemicals such as sorbitan esters of fatty acids and sodium stearoyl lactylate. Residual peroxide is destroyed by heating above its decomposition temperature. 

The primary products used are fatty acids with 12—18 carboa atoms and fatty alcohols, or esters of fatty acids such as the glycerides of rapeseed and lard oil (18). Eatty acid amines and amides are used ia metal working, particularly ia emulsions (18). 

Olestra is prepared by a solvenfless transesterification process in which sucrose is treated with methyl ester of fatty acids in the presence of sodium methoxide between 100—180°C for 14 hours (68). Sulfated Acids, Amides, and Esters. Reaction with sulfuric acid may be carried out on fatty acids, alkanolamides, and short-chain esters of fatty acids. Polyoxyethylene Esters. This series of surfactants consists of polyoxyethylene (polyethylene glycol) esters of fatty acids and aUphatic carboxyhc acids related to abietic acid (see Resins, natural). They differ markedly from mono- and diglycerides in properties and uses. 

Synthetic Conjugated Oils. Tung oil dries rapidly, but is expensive, and its films discolor rapidly due to the presence of three double bonds. These defects led to efforts to synthesi2e conjugated oils, especially those containing esters of fatty acids with two conjugated double bonds. 

Transesterification has a number of important commercial uses. Methyl esters of fatty acids are produced from fats and oils. Transesterification is also the basis of recycling technology to break up poly(ethylene terephthalate) [25038-59-9] to monomer for reuse (29) (see Recycling, plastics). Because vinyl alcohol does not exist, poly(vinyl alcohol) [9002-89-5] is produced commercially by base-cataly2ed alcoholysis of poly(vinyl acetate) [9003-20-7] (see Vinyl polymers). An industrial example of acidolysis is the reaction of poly(vinyl acetate) with butyric acid to form poly(vinyl butyrate) [24991-31-9].

The chromatograms are freed from mobile phase (5 min in a stream of warm air), immersed in the dipping solution for 4 s or sprayed evenly with it and then heated to 110 C for 20 min (the methyl esters of fatty acids are heated to 140°C for 10 min [6]).

Higher molecular primary unbranched or low-branched alcohols are used not only for the synthesis of nonionic but also of anionic surfactants, like fatty alcohol sulfates or ether sulfates. These alcohols are produced by catalytic high-pressure hydrogenation of the methyl esters of fatty acids, obtained by a transesterification reaction of fats or fatty oils with methanol or by different procedures, like hydroformylation or the Alfol process, starting from petroleum chemical raw materials. 

Sorbitan esters of fatty acids are well known. Similar products can be made from ether carboxylic acids and sorbitol without an acid catalyst with a good color [39]. The advantage of these products is that the hydrophilicity can be adjusted by the polyethylene glycol content in the ether carboxylic acid. 

Part of the diet consists of fats, which are triglycerol esters of fatty acids (FAs). The FAs from digestion of ingested fats can be metabolized in a variety of pathways. Fragments of the original FAs are preserved in these processes and can be utilized in the biosynthesis of other molecules. It is important to note that, during metabolism, almost all FAs are broken down into two-carbon units. The only exceptions are FAs with odd numbers of carbon atoms these are relatively rare in the diet. It ean be shown further that there is a partial barrier to the incorporation of FA-derived carbon into the amino acids which constitute collagen.
