Soybean properties

The identity of the moiety (other than glycerol) esterified to the phosphoric group determines the specific phosphoHpid compound. The three most common phosphoHpids in commercial oils are phosphatidylcholine or lecithin [8002-45-5] (3a), phosphatidylethanolamine or cephalin [4537-76-2] (3b), and phosphatidjlinositol [28154-49-7] (3c). These materials are important constituents of plant and animal membranes. The phosphoHpid content of oils varies widely. Laurie oils, such as coconut and palm kernel, contain a few hundredths of a percent. Most oils contain 0.1 to 0.5%. Com and cottonseed oils contain almost 1% whereas soybean oil can vary from 1 to 3% phosphoHpid. Some phosphoHpids, such as dipaLmitoylphosphatidylcholine (R = R = palmitic R" = choline), form bilayer stmetures known as vesicles or Hposomes. The bdayer stmeture can microencapsulate solutes and transport them through systems where they would normally be degraded. This property allows their use in dmg deHvery systems (qv) (8). [Pg.123]

Hydrolyzed Vegetable Protein. To modify functional properties, vegetable proteins such as those derived from soybean and other oil seeds can be hydrolyzed by acids or enzymes to yield hydrolyzed vegetable proteins (HVP). Hydrolysis of peptide bonds by acids or proteolytic enzymes yields lower molecular weight products useful as food flavorings. However, the protein functionaHties of these hydrolysates may be reduced over those of untreated protein. [Pg.470]

Other than fuel, the largest volume appHcation for hexane is in extraction of oil from seeds, eg, soybeans, cottonseed, safflower seed, peanuts, rapeseed, etc. Hexane has been found ideal for these appHcations because of its high solvency for oil, low boiling point, and low cost. Its narrow boiling range minimises losses, and its low benzene content minimises toxicity. These same properties also make hexane a desirable solvent and reaction medium in the manufacture of polyolefins, synthetic mbbers, and some pharmaceuticals. The solvent serves as catalyst carrier and, in some systems, assists in molecular weight regulation by precipitation of the polymer as it reaches a certain molecular size. However, most solution polymerization processes are fairly old it is likely that those processes will be replaced by more efficient nonsolvent processes in time. [Pg.406]

In the late 1800s, when the demand for coated paper for the halftone printing process increased, casein rapidly replaced glue. Casein forms a hard, tough film when dry, and can be waterproofed easily with formaldehyde (qv). The properties of soy protein are similar to those of casein, and soy protein has been substituted for it in many types of coated papers requiring a casein-type binder (see Soybeans and other oilseeds). Casein, a valuable food product, is seldom used as a paper adhesive, in spite of its excellent adhesive properties. [Pg.10]

Soybean Protein Isolates. Soybean protein isolates, having a protein content of >90 wt%, are the only vegetable proteins that are widely used in imitation dairy products (1). Most isolates are derived from isoelectric precipitation, so that the soybean protein isolates have properties that are similar to those of casein. They are insoluble at thek isoelectric point, have a relatively high proportion of hydrophobic amino acid residues, and are calcium-sensitive. They differ from casein in that they are heat-denaturable and thus heat-labile. The proteins have relatively good nutritional properties and have been increasingly used as a principal source of protein. A main deterrent to use has been the beany flavor associated with the product. Use is expected to increase in part because of lower cost as compared to caseinates. There has been much research to develop improved soybean protein isolates. [Pg.442]

Biodiesel is diesel fuel produced from vegetable oils and other renewable resources. Many different types of oils can he used, including animal fats, used cooking oils, and soybean oil. Biodiesel is miscible with petroleum diesels and can he used in biodiesel-diesel blends. Most often blends are 20 percent biodiesel and 80 percent traditional diesel. Soy diesel can be used neat (100%), hut many other types of biodiesel are too viscous, especially in winter, and must be used in blends to remain fluid. The properties of the fuel will vaiy depending on the raw material used. Typical values for biodiesel are shown in Table 1. [Pg.162]

Epoxidized oils were also used to modify PLA Ali et ah (2009) reported that its use as a plasticizer to improve flexibility. Thermal and scanning electron microscope analysis revealed that epoxidized soybean oil is partially miscible with PLA. Rheological and mechanical properties of PLA/epoxidized soybean oil blends were studied by Xu and Qu (2009) Epoxidized soybean oil exhibited a positive effect on both the elongation at break and melt rheology. Al-Mulla et al. (2010b) also reported that plasticization of PLA (epoxidized palm oil) was carried out via solution casting process using chloroform as a solvent. The results indicated that improved flexibility could be achieved by incorporation of epoxidized palm oil. [Pg.34]

PLA/PCL-OMMT nano-composites were prepared effectively using fatty amides as clay modifier. The nano-composites shows increasing mechanical properties and thermal stability (Hoidy et al, 2010c). New biopolymer nano-composites were prepared by treatment of epoxidized soybean oil and palm oil, respectively plasticized PLA modified MMT with fatty nitrogen compounds. The XRD and TEM results confirmed the production of nanocomposites. The novelty of these studies is use of fatty nitrogen compoimds which reduces the dependence on petroleum-based surfactants (Al-Mulla et al., 2011 Al-Mulla et ah, 2011 Al- Mulla et ah, 2010c). [Pg.36]

The food technologist may be especially interested in the fate of the carotenoids in the seed oil. Like red palm oil, the resulting carotenoid-pigmented canola oil may be more stable due to the antioxidant properties of carotenoids and may be more attractive to consumers. Alternatively, for food security concerns, transgenic soybean or canola oils and seed meals that are genetically modified for more efficient bio-diesel production may be bio-safety marked with lipid-soluble carotenoids and water-soluble anthocyanins, respectively. Potatoes are excellent potential sources of dietary carotenoids, and over-expression of CrtB in tubers led to the accumulation of P-carotene. Adsorption and persistence in plants can be modified by other chemicals or by selected carriers, although mechanisms to account for these phenomena are unclear. The application mixture influences adsorption and persistence of fenvalerate. For example, interception and persistence in sugarcane were increased when fenvalerate was applied in a 25% water/75% soybean oil mixture vs. water or soybean oil alone (Smith et al. 1989).
