Problems associated with excessive levels of nutrients and unwanted nuisance species have already been mentioned. There are cases in which intentional fertilization is used by aquaculturists in order to produce desirable types of natural food for the species under culture. Examples of this approach include inorganic fertilizer appHcations in ponds to promote phytoplankton and zooplankton blooms that provide food for young fish such as channel catfish, the development of algal mats through fertilization of milkfish ponds, and the use of organic fertilizers (from Hvestock and human excrement) in Chinese carp ponds to encourage the growth of phytoplankton, macrophytes, and benthic invertebrates. In the latter instance, various species of carp with different food habits are stocked to ensure that all of the types of natural foods produced as a result of fertilization are consumed. 

Species such as carp, salmon, trout, channel catfish, and tilapia have been bred for many generations in captivity though they usually differ httle in appearance or genetically from their wild counterparts. A few exceptions exist, such as the leather carp, a common carp strain selectively bred to produce only one row of scales, and the Donaldson trout, a strain of rainbow trout developed over numerous generations to grow more rapidly to larger size and... 

Anesthetics. Ethyl amiaobenzoate [94-09-7] (benzocaiae), C2H22NO2, is the only anesthetic candidate that might allow spawned-out broodstock carcasses to be used for pet or human food. Studies are still required to determine which residues remain ia the carcasses (9). Electronarcosis is an alternative to chemical anesthesia that uses varying electrical frequencies to rapidly anesthetize fishes and allow gentie recovery. Electronarcosis has been used effectively on tilapia (Oreochromis sp.) and the common carp Cyprinus carpid) and the technique is being tested with other fishes (23,24).

Furthermore, as shown in Figure 5.28, the number of amino acid differences between two cytochrome c sequences is proportional to the phylogenetic difference between the species from which they are derived. The cytochrome c in humans and in chimpanzees is identical human and another mammalian (sheep) cytochrome c differ at 10 residues. The human cytochrome c sequence has 14 variant residues from a reptile sequence (rattlesnake), 18 from a fish (carp), 29 from a mollusc (snail), 31 from an insect (moth), and more than 40 from yeast or higher plants (cauliflower). 

Nonrepetitive but well-defined structures of this type form many important features of enzyme active sites. In some cases, a particular arrangement of coil structure providing a specific type of functional site recurs in several functionally related proteins. The peptide loop that binds iron-sulfur clusters in both ferredoxin and high potential iron protein is one example. Another is the central loop portion of the E—F hand structure that binds a calcium ion in several calcium-binding proteins, including calmodulin, carp parvalbumin, troponin C, and the intestinal calcium-binding protein. This loop, shown in Figure 6.26, connects two short a-helices. The calcium ion nestles into the pocket formed by this structure. 

L-Ascorbic acid, better known as vitamin C, has the simplest chemical structure of all the vitamins (Figure 18.30). It is widely distributed in the animal and plant kingdoms, and only a few vertebrates—humans and other primates, guinea pigs, fruit-eating bats, certain birds, and some fish (rainbow trout, carp, and Coho salmon, for example)—are unable to synthesize it. In all these organisms, the inability to synthesize ascorbic acid stems from a lack of a liver enzyme, L-gulono-y-lactone oxidase.
