A further example is given in reference [88] Selective esterification of retronecine, the dialcoholic component of a pyrolizidine alkaloid, by the imidazolide method was found to be superior to the acid chloride/pyridine method. Acylation of the 9-position of retronecine with tiglic acid, pivalic acid, isobutyric acid, and propionic acid was investigated concerning the steric requirement of the carboxylic acid. [Pg.53]

Odor thresholds in humans appear to be more influenced by the environment than genetics. The detection thresholds for acetic acid, isobutyric acid, and cyclohexanone varied as much in monozygotic twins as in fraternal twins. Instead, smoking and diabetes were related to lower olfactory sensitivity, and body fatness and alcohol consumption to greater sensitivity to the latter two compounds (Hubert eta/., 1980). [Pg.119]

This is quite undesirable in a perfume because many carboxylic acids have objectionable odors. For example, the sharp, penetrating odor of vinegar is due to acetic acid, butanoic acid (butyric acid) smells like rancid butter, and 2-methylpropanoic acid (isobutyric acid) is a component of sweat. A common name for hexanoic acid is caproic acid, derived from the Latin word caper, which means goat. If you have ever been around goats, perhaps you can imagine the odor of hexanoic acid. [Pg.487]

Mixed Carboxylate-Sulfonate Systems. Decanolc and octanoic acids were selected as carboxylic acids in view of their intermediate chain lengths. Some initial experiments using a short-chain carboxylic acid (isobutyric acid) were not very promising, apparently because only a fraction of the acid would partition to the drop surface. [Pg.244]

Volatile fatty acids p resent in wine may derive from the anabolism of lipids, resulting in compounds with even number of carbon atoms, by oxidative decarboxylation of a-keto acids or by the oxidation of aldehydes. Volatile fatty acids synthesised from a-keto acids are mainly propanoic add, 2-methyl-l-propanoic acid (isobutyric acid), 2-methyl-l-butanoic acid, 3-methyl-l-butanoic acid (isovaleric acid 3-methylbutyric add) and phenylacetic add. From lipid metabolism, the following fatty acids are reported butanoic add (butyric), hexanoic acid (caproic), odanoic acid (caprylic) and decanoic add (capric) (Dubois, 1994). Although fatty adds are charaderized by unpleasant notes (Table 1), only few compounds of this family attain its perception threshold. However, their flavour is essential to the aromatic equilibrium of wines (Etievant, 1991). [Pg.116]

Acids Fatty acids production is governed by the initial composition of the must and by fermentation conditions and have been described with fruity, cheese, fatty, and rancid notes (Rocha et al., 2004). The most abundant acids in Rojal wines were butyric acid, isobutyric acid, isovaleric acid, hexanoic acid, octanoic acid and decanoic acid. The contents of 6, 8, and 10-carbon atom fatty acids, were in agreement with those found by Garcia-Carpintero et al., 2011a,b in wines made with others grape varieties and fermented in the same conditions. [Pg.158]
