Mass spectrometry has become a very important technique in the identification and quantification ofphenolics in fruit and vegetables. Different factors, such as sensitivity and specificity, have been cited to explain the acceptance of this method by the scientific community. Additionally, this technique might easily combine with different separation techniques such as CE, gas chromatography (GC), and liquid chromatography (LC), including HPLC and UPLC (ultra performance liquid chromatography).

The penalty for using fine particles is resistance to solvent flow. Until recently, HPLC operated at pressures of 70-4(X) bar to attain flow rates of 0.5-5 mL/min. Reversed-phase HPLC is the most widely to quantify furanocoumarins. The quantitative analysis of some furanocoumarins from P. sativa fruits was performed by RP-HPLC in system C18 eluted with methanol and water in gradient elution [42,43,76]. The quantitative analysis of furocoumarins present in P. alsaticum and P. cervia was performed by UPLC (ultra-performance liquid chromatography) using a colunrn packed with 1.7 pm Cl 8 [57].
