Apple Golden Delicious

The cocktail is pale gold. The apple in the Garden of Eden was a Golden Delicious, apparently. And the drink is a temptation. As for Adam s Eve, the original uncosmopolitan, who had never seen an apple before, let alone an apple martini, we can only be grateful she didn t stumble upon a bartender serving these. [Pg.73]

Golden delicious apples Malus domestica) and tomatoes Solarium lycopersicum) were purchased at the local market. Fruits were peeled and sliced before treatment (4 h at 45 °C) with 0.1 % Pectinex Ultra Sp-L (Novo Ferment) in presence of 9 mM ascorbic acid. The insoluble material was then eliminated by centrifugation and the obtained juices dialysed against distilled water. [Pg.69]

Sampling Golden delicious apples were sampled in intervals of three weeks over a hole season. Sampling started at the so-called June-drop , which corresponds to the end of the cell division phase (= week 0). After harvest (week 14), the mature apples were stored over a period of 20 weeks at 4°C and 95% relative humidity. [Pg.652]

Table II shows the parathion residues on Golden Delicious apples in the Mississippi Valley immediately after the final spray application and after 25 and 38 days of weathering. Five plots received six parathion sprays and a sixth plot received parathion in only the last two sprays. In a study comparing organic and conventional apples (variety Golden Delicious) from a range of commercial orchards it was found that reproducible differences between apples from organic and conventional systems can be detected (Fig. 16.6). Additionally, the vitality index produced based on the picture forming method was found to be correlated with the technical standard index based on chemical quality tests and the sensory test results (Fig. 16.7, left) (Weibel et al., 2004a). [Pg.344]

The yeasts also have been evaluated for antifungal activity. Spadaro and others (2008) reported that Hanseniaspora uvarum, Rhodotorula spp., and Metschnikowia pulcherrima reduced the development of P. expansum on apples. In this work the biocontrol effectiveness was assessed on four apple cultivars, Golden Delicious, Stark Delicious, Granny Smith, and Royal Gala. The efficacy was higher on the cv. Golden Delicious. [Pg.350]

Table H2.3.4 shows an example of cohesiveness data from apple cultivars as assayed in Alternate Protocol 1. The cohesiveness discriminates between Golden Delicious and Stark Delicious. The apples of extra quality showed the lowest values of cohesiveness. These results suggest that TPA parameters can differentiate between apple cultivars (Paoletti et al., 1993). Hammami et al. [4.27] determined 0.5 mbar and rSh = 55 °C as the optimum (for quality and operational data) drying conditions for the freeze-drying of apple slices, loaded with 17 kg/m2 and dried in 48-50 h. The rehydration ratio was -0.55 g/g of water removed and the texture loss of rehydrated apples was estimated to be more than 85%. Sa et al. [4.28] used DSC to measure the Tg of freeze-dried Golden Delicious apples after exposure to aw from 0.12 to 0.93. The sorption isotherms are reported. [Pg.350]

At a farmers market, there is a barrel filled with apples. In the barrel are 40 Fuji apples, 24 Gala apples, 12 Red Delicious apples, 24 Golden Delicious, and 20 McIntosh apples. If a customer reaches into the barrel and selects an apple without looking, what is the probability that she will pick a Fuji or a McIntosh apple ... [Pg.170]

Fruits and juices have been investigated by a number of researchers. Schamp and Dirinck ( 5) found over forty compounds in a study of strawberry varieties, as well as finding 22 compounds in Golden Delicious apples. Keenaghan and Meyers ( ) reported on the GC/MS identification of over twenty different compounds in several varieties of apples and apple products. Additional work with apples has been reported by Westendorf ( 7) This same paper reported the analyses of dairy products, vegetable oils, and artificial flavors. Edible oils have been extensively studied since the presence of volatiles was first recognized as an indicator of oil quality (8). Considerable work with oils and oil-based foods using manual procedures has been reported by Jackson et al. (9,H)), Dupuy et al. (jU, 1 2), and Selke (1 3). In 1983 Roberts (F4) first reported the use of an automated DHA procedure for oil volatiles. [Pg.139]

As aroma Is one of the key factors In flavor quality. It can be used as a criterion for evaluation of flavor quality of apples. By following the evolution of the volatile composition a complete picture of the dynamic flavor quality process can be obtained. In Figure 4 the sum of esters Is presented as a function of days of ripening In standard conditions (I8°C) for Golden Delicious apples. [Pg.25]
