Starch, modified phosphate

Surimi is fish paste from deboned fish used to make simulated crab legs and other seafood. For preservation the paste is blended with cryoprotectants, such as sucrose, sorbitol and phosphates, and frozen. To make the final product, the frozen paste is thawed, blended with starch and extruded as a film onto a belt. The belt takes the film into an oven that heat-denatures the fish protein and cooks the starch. The film is then rolled to form striations, shaped, colored and cut. Depending on the required distribution, the product is frozen or refrigerated. Potato and tapioca starch were used in surimi products 400 years ago, since they provided a cohesive, elastic matrix consistent with seafood. Frozen distribution has made the use of highly-stabilized, moderately crosslinked tapioca starch popular, alone or with native tapioca starch. Modified waxy maize products are used, as is unmodified com starch, for increased cuttability. In the case of boilers operating at low pressure, organic materials such as natural and modified tannins, starches, or alginates are added to aid blowdown. For boilers operating at high pressure, synthetic materials such as polyacrylates and polymethacrylates have been developed. Amylopectin is the polymeric component of starch and consists mainly of glucose units joined at the 1,4-positions. Relative molar mass tends to be very high, e.g. between 7 and 70 million. A variety of modified starches are used commercially which are produced by derivatisation to give materials such as ethanoates (acetates), phosphates, and hydroxyalkyl ethers. The effect of phosphate on alkaloid production has also been evaluated (138). Using a modified induction medium devoid of phosphate and other essential growth factors, production of secondary compounds was more rapid than when phosphate was present. A broader study of the phenomenon has been reported by a French group (139) where, using three alkaloids as markers, the disappearance of the major nutrients from the medium and the evolution of phosphates, nitrates, ammonium ions, glucose, and starch in the cells were observed over time. It was not possible to relate alkaloid accumulation to the appearance or disappearance of any one metabolite in particular.
