Industrially produced lard is rendered from a mixture of high and low quality fat sources from throughout the pig. It is typically hydrogenated, and often treated with bleaching and deodorizing agents, emulsifiers, and antioxidants. Such treatments make the lard shelf stable. The available quantities of lard are about 6 million tonnes a year. The fat contains palmitic (20%-32%), stearic (5%-24%), oleic (35%-62%), and linoleic (3%-16%) acids as major components. The nitrogen atom in lecithin is in the cholyl radical, —0(CH2)2 N(CH3)3+. The radicals R and R are those of different fatty acids (palmitic, stearic, oleic, etc.), in different ratios for different plants and animals. Lecithin is formed in the body from fats. It is a good emulsifying agent, and probably helps in carrying fats to the tissues. 

Commercial products are mixtures of partial esters of sorbitol and its mono- and dianhydrides with oleic acid. They are generally insoluble in water and are used as water-in-oil emulsifiers and as wetting agents. Salts of fatty acids (sodium, potassium and calcium salts, E470a, or magnesium salts, E470b) are produced mainly from vegetable oils, but can also be produced from animal fats.
