Industrially produced lard is rendered from a mixture of high and low quality fat sources from throughout the pig. It is typically hydrogenated, and often treated with bleaching and deodorizing agents, emulsifiers, and antioxidants. Such treatments make the lard shelf stable. The available quantities of lard are about 6 million tonnes a year. The fat contains palmitic (20%-32%), stearic (5%-24%), oleic (35%-62%), and linoleic (3%-16%) acids as major components.
