The distribution of rods and cones is shown in Figure 3b centered about the fovea, the area of the retina that has the highest concentration of cones with essentially no rods and also has the best resolving capabiUty, with a resolution about one minute of arc. The fovea is nominally taken as a 5° zone, with its central 1° zone designated the foveola. There are about 40 R and 20 G cones for each B cone in the eye as a whole, whereas in the fovea there are almost no B cones. A result of this is that color perception depends on the angle of the cone of light received by the eye. Optic neuritis (a decrease in visual acuity and changes in color perception), which appears to be related to the dose given and die duration of treatment, has occurred in some patients receiving ethambutol. Usually, tiiis adverse reaction disappears when the drug is discontinued. When Munsell devised his color space, he did so on the basis of minimum observable color perception steps. But the problem with the Munsell System was one of reproducibility, which the CIE Standard Observer cured. In formulating a color match, one wants to be able to predict the correct concentration of colorants required, whose scattering and absorption properties are known, i.e.- the lightness, so as to match the sample submitted, starting with their spectrophotometric curves. In practice, this is not so simple, since two colors must have identical spectrophotometric curves to be exactly equal. It turns out that the human eye will identify the two colors to be equal if their spectrophotometric reflectances are reasonably close. Two colors may appear to be equal under Daylight illumination, but quite different under incandescent lamp illumination. In the preceding section, we presented principles of spectroscopy over the entire electromagnetic spectrum. The most important spectroscopic methods are those in the visible spectral region where food colorants can be perceived by the human eye. Human perception and the physical analysis of food colorants operate differently. The human perception with which we shall deal in Section 1.5 is difficult to normalize. However, the intention to standardize human color perception based on the abilities of most individuals led to a variety of protocols that regulate in detail how, with physical methods, human color perception can be simulated. In any case, a sophisticated instrumental set up is required. We present certain details related to optical spectroscopy here. For practical purposes, one must discriminate between measurements in the absorbance mode and those in the reflection mode. The most successful quantitative expression of color is that known as the CIE (Commission Internationale de l Eclairage) system [13]. This methodology assumes that color may be expressed as the summation of selected spectral components (blue, green, and red hues) in a three-dimensional manner. The CIE system is based on the fact that human sight is trichromatic in its color perception, and that two stimuli will produce the same color if each of the three tristimulus values (X, Y, and Z) are equal for the two.
