Both the fervor that marks Russians attention to natural foods and the extent to which this passion is widely shared among the general population today are legacies of Soviet-era concerns with food safety issues. Despite Soviet officials efforts to promote scientific food systems as the ideal means to guarantee food quality and healthfulness, many consumers viewed industrially produced foods and public food facilities with suspicion.
