The selection of the topics that are covered in THE CONCISE ENCYCLOPEDIA OF FOODS AND NUTRITION was based on the authors professional experiences and perceptions relative to the needs of consumers, with application to many related fields, including medicine, dentistry, nursing, dietetics, teaching, nutritional science, public health, athletics, homemaking, and food production, processing, distribution and marketing. As the authors selected and treated each of the subjects, they were guided by the simple question "Is it helpful " If the answer was in the affirmative, they proceeded with the philosophy of "let the chips fall w ere they may," no matter how complex or how controversial the subject. Though authored by professional characterization experts the articles are written to be easily accessible to the materials user, the process engineer, the manager, the student—in short to all those who are not (and probably don t intend to be) experts but who need to understand the potential applications of the techniques to materials problems. Too often, technique descriptions are written for the technique specialist. 

These types of situations remain problematic for a variety of reasons. First and foremost, safety professionals write plans for and are concerned with avoiding accidents. When PPE is being planned, the author of the plan will typically take a conservative approach toward PPE. Most times, the plan s author has not seen the site and does not have in-depth information or pictures of the actual working site. 

Chapter 2 stressed the need to consider the results of plant modifications before they are made and to prevent unauthorized ones. This applies to computers as well as traditional plant. No change should be made to hardware or software unless authorized by a professionally competent person who has carried out a systematic survey of possible consequences. It is easier to change a software control system than a traditional one and therefore harder to control the changes, but it is just as important to do so. Section 20.5 describes an unauthorized change to hardware that could have had serious results.

Although written reports are the inspecting authority s end product they by no means comprise the whole of the professional service that is supplied or is available on request. It offers keyword and author (as well as structure and sequence) searches and covers a wide range of medicinal chemistry-related journals. This resource, coupled with e-journals, affords the medicinal chemist the tools to keep up with any research topics of interest. Because of the public nature of the Web, now a chemist can sometimes find critical journal articles on the Web that do not show up until much later in traditional literature sources. It is not uncommon that scientific meeting presentations can be found on the Web. Indeed, the Internet tools we have all become familiar with also have made the professional life of the medicinal chemist much easier.
