Relatively thermostable proteins, which have an inhibitory effect on pancreatic amylase, are found in aqueous extracts of navy beans, wheat, and rye. As a result of the high thermostabilty, inhibitor activity is also detectable in breakfast cereals and bread. [Pg.757]

As a result, it has no measurable influence on the digestion of starch by human beings.
