All proteins have colloidal properties they differ in their solubility in water, ranging from insoluble keratin to albumins, which are highly soluble. Soluble proteins can be precipitated from solution by the addition of certain salts such as sodium chloride or ammonium sulphate. This is a physical effect and the properties of the proteins are not altered. On dilution the proteins can easily be redissolved. 

Sulfitolysis is another means by which the disulfide bond is broken by some fungi. This reaction occurs in the presence of sulfite and under alkaline conditions. It cleaves the disulfide in cystine to S-sulfocysteine and cysteine [74, 75]. This causes the keratin chains to denature by releasing them from one another (chaini-S-S-chain2-I- SO3" chaini-S-S03 -1- S-chain2). The fungal oxidation of thiols in the cysteine residues yields sulfide for this reaction, and the liberation of ammonium from the deamination of the amino acids creates the alkaline conditions to help drive this reaction [76]. 

After the wool is reduced, it is reacted with iodo acetic acid. When extracted using ammonium water, S-carboxymethyl keratin (SCMK) can be extracted. When fractionated according to solubility differences, it is divided into SCMKA with low solubility and SCMKB with high solubility. When SCMKB is fractionated further, HS protein is obtained. 

Cationic surfactants. These have a good affinity with keratin, are antistatic and some of them can act as bactericide. More common are ammonium tetra aUcyl chlorides.
