Apricot was used as a model for studies of fruit puree clarification. Various puree concentrations were treated for 30 min at 50° C with 0.4 cc/L, each, of commercial cellulase and pectinase enzyme and clarified by filtration through a 0.45(im pore size ceramic microfilter. Sparkling clear apricot juice was produced at flux rates from 90-190 L/m2h. Above 13° starting Brix. juice flux showed little increase with increasing starting Brix. Dissolved solids flux increased substantially with increasing starting Brix. Permeate remained clear and retained most of its flavor and aroma when concentrated by vacuum evaporation to 58° Brix. There appears to be some retention of enzymes by the filter. Retained enzymes were successfully utilized in a 4 h trial in which untreated puree was continuously added to retentate. in amounts equal to permeate removed, after startup on enzyme-treated puree. [Pg.355]

A phytochemical study of fruits of C. nemorosa led to isolation of nemorosinic acid A (34) and B (35) which contained an oxidized lavandulyl chain characterized by the presence of a carboxyl group [32]. Both sets of NMR spectra indicated the presence of two components in a ca 3 2 and 1 1 ratio respectively which demonstrated the existence of a keto-enolic equilibrium in these compounds. However, nemorosinic acid A was identified as a PBD and nemorosinic acid B as an alkylarylketone. Thus, the FA composition of sea buckthorn fruit reserve lipids is rather unusual. Firstly, the mesocarp contains a highly saturated oil such oils are present in few plant species /7,8/. Secondly, TAGs rich in C g-UFAs accumulate in the seeds although the latter are devoid of chloroplasts which are generally believed to be responsible for UFA synthesis in oilseeds (linseed, soybean etc. /9/). Therefore, the study of fruit reserve lipid formation in sea buckthorn, as a representative of POM, is desirable.
