Lactate sodium

Sodium lactate is used and approved as (1) a flavor enhancer, (2) humec-tant, and (3) pH control agent (Duxbury, 1988 Lemay et al., 2002). The salts lactate and diacetate on their own are known to exhibit antilisterial activity in RTE (ready-to-eat) meat, but enhanced inhibition has also been reported when these salts are used in combination (Mbandi and Shelef, 2002). 

Sodium lactate (3-4%) in cooked beef is effective in limiting proliferation of Salmonella typhimurium, L. monocytogenes, and E. coli 0157 H7 (Miller and Acuff, 1994). Sodium lactate (3%) added to vacuum-packaged beef top rounds is effective as an oxidant and color stabilizer for cooked beef (Maca et al., 1999 Choi and Chin, 2003). 

In the application of fumarate to ruminant feed, the sodium salt is generally used because fumaric acid decreases ruminal pH. Sodium fumarate is effectively used as a buffer, due to the properties of fumaric acid, and also the sodium part that serves to raise the pH similar to the role of sodium in sodium bicarbonate (Castillo et al., 2004).
