Like oil and water is a saying based on the minimal interaction of fipids with water. Although this saying is apt for isoprene-based fipids and bulky fatty acid-based lipids such as waxes and triglycerides, it is not apt for all lipids (e.g., it does not apply to substances composed of fatty acids or dia-cylglycerides). [Pg.736]

The identification of individual classes of fatty acids has relied on the use of gas chromatography (GC), equipped with a flame ionization detector. Lipids are sapoiufled after extraction and the fatty acids converted to methyl esters. The fatty acid methyl esters (FAME) are separated using GC. The use of standards ahowed for the identification of individual species of fatty acids based on retention time. The method is quite sensitive and permits the quantification of fatty acid species. The mode of detection has been enhanced with the use of mass spectrometry (MS), which allows for the detection and quantification of unknowns, thus increasing the utility of these methods. No strict definition exists for the term lipid that is generally accepted. In a broad sense, lipids are compounds of low or intermediate molecular weight with a substantial proportion of hydrocarbons (1). Lipids have also been defined as fatty acids and their derivatives, and substances related biosynthetically or functionally to these compounds (4). The data presented here are representative of Western European consumption patterns. There is an important gap between nutritional recommendations and actual consumption.
