The reported effect of konjac GaM on the glass transition of high-sugar/polysaccharide mixtures [242] can be utilized in sugar, hard-boiled and frozen confectionery products and might replace gelatin, which is refused by some consumers due to diet and health problems. [Pg.32]

We proposed to study diet and health by combining bone chemistry and histomorphometry. Diet would be determined by analysis of stable isotopes of carbon and nitrogen in bone protein and some preserved hair. In addition, trace elements would be quantitatively analyzed in preserved bone mineral. Abonyi (1993) participated in the study by reconstructing the diet from historical sources and analyzing various foods. Having analyzed human tissues for stable isotopes and trace elements, and foods for the same variables, we hoped to learn more about 19th century diet in southern Ontario, and at the same time, learn more about paleodiet reconstruction. [Pg.3]

A healthy diet with proper nutrition is essential for maintaining good overall health. Since the discovery of vitamins earlier in this century, people have routinely been taking vitamin supplements for this purpose. The Recommended Dietary Allowance (RDA) is a frequently used nutritional standard for maintaining optimal health. The RDA specifies the recommended amount of a number of nutrients for people in different age and sex groups. The National Research Council s Committee on Diet and Health has proposed a definition of the RDA to be that amount of a nutrient which meets the needs of 98% of the population. [Pg.115]

This brief introduction demonstrates that the relationships between diet and health are far from simple and most certainly far from fully understood, but for a critical and detailed review of epidemiological data the reader is referred to an excellent paper by Arts and Hollman. The objective of the review that follows is to record recent changes in the perceived role of flavonoids as health-promoting dietary antioxidants and place these... [Pg.320]

The European Prospective Investigation into Cancer and Nutrition (EPIC) is the largest study of diet and health in the EU, with over 520,000 participants in 10 European countries. The study, initiated in 1992, collects detailed information and diet and lifestyle factors in addition to blood samples, which are stored for future analyses. The study participants will be followed for the next 10 years to investigate the role of nutrition in the development of chronic disease (IARC 2005). [Pg.87]

We often see in consumer news and advertisements that blueberries are nature s number one antioxidant fruit or are an antiaging food. Although blueberries are wonderful whole foods, we need to maintain a scientifically sound perspective of them in reference to our diets and health expectations. Describing a fruit as antioxidant-rich implies a health benefit that has not yet been scientifically proved. In fact, polyphenol antioxidant research in humans has not even reached step 3 in the health claims research pyramid, and such proof is more than ten years away. [Pg.76]
