Pasteurizing of egg white could cause adverse effects on whipping properties. Whipping aids are presented as an optional ingredient in Hquid and frozen egg white. For example, triethylcitrate [77-93-OJ, 0 2 200, is sometimes added as a whipping aid, as well as a gum to increase viscosity and to improve stabiHty of the egg white foam. [Pg.460]

ELF can be visualized with different kinds of images. Colored sections through a molecule are popular, using white for high values of ELF, followed by yellow-red-violet-blue-dark blue for decreasing values simultaneously, the electron density can be depicted by the density of colored points. Contour lines can be used instead of the colors for black and white printing. Another possibility is to draw perspective images with iso surfaces, i.e. surfaces with a constant value of ELF. Fig. 10.2 shows iso surfaces with ELF = 0.8 for some molecules from experience a value of ELF = 0.8 is well suited to reveal the distribution of electron pairs in space. [Pg.89]

The first proteins from transgenic plants to reach commercial status were avidin and P-glucuronidase (GUS) both of which are used as diagnostic agents in molecular biology. An important principle demonstrated by these case studies is that molecular farming in cereals can be an economical alternative even when the natural source of a protein is abundant (i.e. egg whites for avidin, and Escherichia coli for GUS) and where a market is already established. [Pg.63]

National surveys have consistently shown growing support by whites for integration. In 1942, only 30% of white respondents supported school integration in 1970, the figure was 74% and by 1991, 93% of white respondents expressed support. History has shown that just as changes in attitude can mobilize public support to rectify racial inequality, the process can also work in the opposite direction.
