Ashby s theoretical studies of the mechanical behavior of cellular solids, and those of his followers as well, serve as most useful guidelines. But one should always keep in mind that cellular foods do not have cells of rmiform size and geometry. Closed and open cells can coexist at different ratios and the former can sometimes burst open upon compression, as has been demonstrated in breads. In the future, nondestructive imaging methods to determine 3-D structures will probably provide information that will clarify the relationship between the cellular architecture, the cells properties and texture.

Other examples of tissues that have been investigated with photothermal methods include ocular and arterial tissues. IR photothermal radiometry, in particular, shows promise as a general diagnostic tool in biomedical studies, in the nondestructive imaging of very thin layers.

The uniqueness and desirability of EELS is realized when it is combined with the power of a TEM or STEM to form an Analytical Electron Microscope (AEM). This combination allows the analyst to perform spatially resolved nondestructive analysis with high-resolution imaging (< 3 A). Thus, not oiJy can the analyst observe the microstructure of interest (see the TEM article) but, by virtue of the focusing ability of the incident beam in the electron microscope, he or she can simultaneously analyze a specific region of interest. Lateral spatial resolutions of regions as small as 10 A in diameter are achievable with appropriate specimens and probe-forming optics in the electron microscope. 

The scanning acoustic microscope is a powerful new tool for the study of the physical properties of materials and has been successfully used for imaging interior structures and for nondestructive evaluation in materials science and biology. 

Compounds that are radioactive can be located on a preparative layer by contact film autoradiography, electronic autoradiography, and storage phosphor screen imaging [21-23]. These methods differ in terms of factors such as simplicity, speed, sensitivity, and resolution, and the method of choice depends on the available equipment, reagents, and instrumentation. All are nondestructive, and the detected compounds can be recovered without change for later studies.
