Fish products functionality

The precursors of both n-6 and n-3 polyunsaturated fatty acids (PUFAs), linoleic acid and (/.-linolenic acid, respectively, are essential for mammals as they are required for normal physiological function and cannot be synthesized de novo (Holman, 1968). They can only be accumulated by placental transfer or by dietary intake. Once accretion of these fatty acids has occurred, metabolic, conservation and recycling pathways sustain them (B azan et al., 1994). Unlike mammals, plants can synthesize these precursor PUFAs (linoleic and a-linolenic acids) so they are found in abundance in the chloroplast membranes of plants, in certain vegetable oils, and in the tissues of plant-eating animals (Nettleton, 1991). The best sources of a-linolenic acid are vegetable oils, such as perilla (Yoshida et al., 1993) rapeseed (canola), linseed, walnut, and soybean (Nettleton, 1991). They are also abundant in shellfish, fish, and fish products and can be found in low amounts in green, leafy vegetables and baked beans (Nettleton, 1991 Sinclair, 1993). [Pg.193]

In general, nonconventional protein foods must be competitive with conventional plant and animal protein sources on the bases of cost delivered to the consumer, nutritional value to humans or animals, functional value in foods, sensory quality, and social and cultural acceptability. Also, requirements of regulatory agencies in different countries for freedom from toxins or toxic residues in single-cell protein products, toxic glycosides in leaf protein products, pathogenic microorganisms, heavy metals and toxins in fish protein concentrates, or inhibitory or toxic peptide components in synthetic peptides must be met before new nonconventional food or feed protein products can be marketed. [Pg.472]

Decreased production of yolk protein resulting from inhibition of either ovarian or liver function presents the fish with a similar choice to that resulting from decreased food availability. Female sexual development and behaviour in mammals occurs by default and requires no ovarian secretion, and it is only in genetic males that the testis can secrete hormones which destroy this female pattern and superimpose that of the male. Sexual differentiation is not so well defined in fish, and larval exposure to both synthetic estrogens and androgens is widely used in aquaculture to produce monosex cultures. Endocrine disruption of sexual differentiation in fish may therefore reflect both the complexity and diversity of such processes between different species. Some care is required in use of the terms hermaphrodite and sex-reversal since a true hermaphrodite has both functional testes and ovaries and a sex-reversed fish is fully functional as its final sex—both produce the appropriate viable gametes. Such functional sex-reversal is not possible in mammals, but in some species of fish it is the normal developmental pattern. In most of the cases of hermaphroditism or sex-reversal reported in the non-scientific press, there is evidence only for a few ovarian follicles within a functional testis. This may be considered as feminisation or a form of intersex, and is very clearly endocrine disruption, but it is certainly neither sex-reversal nor hermaphroditism. In some cases the terms have even been used to infer induction of a single female characteristic such as production of yolk-protein by males. [Pg.41]

So far, commercial applications have been developed only for poly(3HB-co-3HV) (Biopol) by ICI [52,142]. This material has been processed into bottles for hair care products (Wella) and biodegradable motor oil [84]. Moreover, various containers, disposable razors, and food trays for holding portions of fish and meat in the refrigerated section of supermarkets were all manufactured from Biopol and sold in Japan [84,143]. In these cases, the rather expensive Biopol is used solely for its green image in order to increase product sales and to open up the market for other applications, which require biodegradability for functional reasons [18]. [Pg.284]

Consumption of fish oil in excess can generate immunotoxic effects in laboratory animals. Rats fed a 17% fish oil diet had reduced wound-healing responses when compared to com oil [59], In a mouse model of bacterial resistance to S. typhimurium, lower survival rates were reported for those animals that ingested a 20% fish oil diet over 15 days [59], Similar fish oil-induced effects in guinea pigs were noted in a study of experimental tuberculosis leading the authors to conclude that this treatment resulted in decreased resistance to infectious disease. The consumption of fish oil has also been reported to result in alterations of hemostatic parameters such as platelet production and function. However, there is no indication that at doses normally consumed by humans, immunotoxicity will occur. [Pg.193]
