The Cahn-Ingold-Prelog (CIP) rules stand as the official way to specify chirahty of molecular structures [35, 36] (see also Section 2.8), but can we measure the chirality of a chiral molecule. Can one say that one structure is more chiral than another. These questions are associated in a chemist s mind with some of the experimentally observed properties of chiral compounds. For example, the racemic mixture of one pail of specific enantiomers may be more clearly separated in a given chiral chromatographic system than the racemic mixture of another compound. Or, the difference in pharmacological properties for a particular pair of enantiomers may be greater than for another pair. Or, one chiral compound may rotate the plane of polarized light more than another. Several theoretical quantitative measures of chirality have been developed and have been reviewed elsewhere [37-40]. 

In the United States the analytical methods approved by most states are ones developed under the auspices of the Association of Official Analytical Chemists (AOAC) (3). Penalties for analytical deviation from guaranteed analyses vary, even from state to state within the United States (4). The legally accepted analytical procedures, in general, detect the solubiUty of nitrogen and potassium in water and the solubiUty of phosphoms in a specified citrate solution. Some very slowly soluble nutrient sources, particularly of nitrogen, are included in some specialty fertilizers such as turf fertilizers. The slow solubihty extends the period of effectiveness and reduces leaching losses. In these cases, the proportion and nature of the specialty source must be detailed on the labeling. 

Initially, there was some ovedap on proposed analytical methods to accomplish a particular analysis. The Association of Official Analytical Chemists (AOAC) methods and Bacteriological Analytical Manual (BAM) methods in some cases dupHcated ASTA methods, but the procedures differed. Most spice companies, particulady those who are members of ASTA, use ASTA recommended methods. In an attempt to ensure that equivalent specifications are reported, the Technical Group of ASTA develops specifications and in some cases recommends that a BAM or AO AC method be used. 

Fat Replacers. Eat has a ubiquitous presence in food and provides unique flavor, mouthfeel, and functional effects. At 9 kcal/g (38 kj/g), fat can be a principal source of dietary calories, and excessive consumption has been correlated with the incidence of chronic disease and morbidity. Health officials have strongly urged consumers to reduce fat intake to no more than 30% of daily calories. Therefore, a demand for low fat versions of high fat foods has developed. Eat replacers (qv) are the ingredients that make these foods possible. 

Most new patent cases of interest are pubHshed by at least one of the U.S., European, or Japanese patent offices, and WIPO (PCT). Japan presents problems for those not able to read Japanese, but the U.S. Official Ga tte (with representative claims) and PCT Ga tte (with English-language abstracts) can be in one s hands within a week of patent pubHcation. Similar timing is available for the European Patent Office bulletin which contains trilingual tides and the on-line EPAT file and various CD-ROM products. A highly effective alerting program can be developed from a combination of these methods.

The successful and profitable control of frozen food quality requires workable standards of product quality and condition and suitable methods for determining the degree of product conformance with standards. The frozen fruit and vegetable industry has developed rapidly during the past 20 years and serious concentration upon the development of adequate standards and objective methods for quality measurement is necessary. Such standards and methods should be placed on a uniform basis the country over and given official and legal status.
