Fermentation Processes. The efficient production of penicillin, yeasts, and single-ceUed protein by fermentation requires defoamers to control gas evolution during the reaction. Animal fats such as lard [61789-99-9] were formerly used as a combined defoamer and nutrient, but now more effective proprietary products are usually employed. Defoamer appHcation technology has also improved. For example, in modem yeast production faciHties, the defoamers are introduced by means of automatic electrode-activated devices. One concern in the use of defoamers in fermentation processes is the potential fouHng of membranes during downstream ultrafiltration (qv). SiHcone antifoams (43,44) seem less troubled by this problem than other materials.

The biochemistry of a bacterial cell differs significantly from that of an animal cell. For example, bacteria may have to synthesize essential vitamins which animal cells can acquire intact from food. The bacterial cells must have the enzymes to catalyse these reactions. Animal cells do not, since the reactions are not required. 

Metabdic Reactions. Animal tissues appear to contain an enzyme system which catalyzes the oxidation of the cinchona alkaloids. A number of oxidation products is formed of which the 2 -hydroxy derivatives of quinine and cinchonine have been isolated and identified (143, 144). 

There are several reports in the literature of cases of occupational contact dermatitis and contact urticaria of animal origin in veterinary surgeons, especially those who perform obstetric work with cows [160-164]. Obstetric work is traditionally performed without rubber gloves, and direct contact with obstetric fluids and other proteinaceous materials is responsible for many immediate contact reactions. Animal hair, blood and saliva [163-166] have also been reported as causative agents (Table 5). Hjorth et al. [161] studied 36 veterinary surgeons with incapacitating hand dermatitis. Sixteen of them stated that vaginal or rectal examinations could cause a flare of dermatitis scratch test with obstetric fluid from cow was performed on...
