Back extrusion is an important method for determining the yield force required for food materials that are homogeneous and that flow. The yield force is the point where flow is initiated. Using a plunger and a cylinder open at one end (Figure H2.2.5), it is possible to extrude food material back through the annular gap. Extrusion occurs beyond the rupture point of the food.
