Beans sprouted

Experiments with gaseous acetic acid have been performed for disinfection of seeds intended for the production of bean sprouts (Delaquis et al., 1999). Salmonella typhimurium and E. coli 0157 H7 were eradicated from the surface of mung bean seeds and it was reported that the seed germination loss was not too large. The seeds have often been the suspected source of contamination in sprout-associated outbreaks and sanitation methods that do not interfere with the germination of the seeds are appreciated. Other volatile chemical treatments have been tested for lethality to Salmonella spp. on alfalfa seeds and sprouts with varying results both on the efficacy of the disinfectant and its effect on sensory qualities (Weissinger et al., 2001).

Warriner et al. (2003b,c) have used GUS in situ staining to demonstrate the internalization of generic E. coli in spinach and bean sprouts.

Walters and Loring (88) have purified a 3 -nucleotidase about 50-fold from mung bean sprouts (Phaseolus aureus Roxb.). The enzyme hydrolyzes 3 -AMP, 3 -GMP, 3 -CMP in decreasing order and also hydrolyzes the 3 -phosphate group of coenzyme A. (89), but it has no significant activity for 2 - or 5 -ribonucleotides. For 3 -GMP, 3 -AMP, 3 -UMP, and 3 -CMP, Km values are 0.67, 1.1, 7.7, and 15 mM, respectively. The enzyme preparation also contained acid stable ribonuclease activity (89). Both 3 -nucleotidase and acid ribonuclease were inactivated reversibly at pH 5.0 and by dialysis and this inactivation could be prevented by Zn2+. The two activities were similarly inactivated by heat at pH 5 and 7.5. Such data indicate that the two are metalloproteins— probably zinc metalloproteins. These similarities and other kinetic data provide evidence that the 3 -nucleotidase and ribonuclease activities reside in the same protein.

Sprouted beans and seeds are another great way to increase the raw power of your diet. You may already be familiar with bean sprouts, found in most grocery stores. These are made from mung beans (small green beans) that have been soaked and sprouted. You can also try sprouting organic alfalfa, broccoli, chia, pumpkin, sunflower, or clover seeds and soybeans, chickpeas, lentils, and adzuki beans. Avoid kidney bean sprouts, as they are highly toxic.

Three blocks south of Evanston downtown is one of the state s oldest vegetarian restaurants. Although the decor of the Blind Faith Cafe (525 Dempster St., b 847-328-6875) is undeniably a throwback to the 1970s, its food is definitely not. A revolving menu starts with appetizers such as the cornmeal-crusted tofu cakes served with shaved onion in a red wine sauce. Unique international entrees are unusual additions to the Chicago culinary scene. Try the mu-shu-seasoned tempeh with zucchini, carrots, red peppers, baby corn and bean sprouts, served with plum sauce and Manda-... 

Lunch is an underrated bargain. A full plate of bok choy, pea pods, bean sprouts, water chestnuts and other vegetables served over vegetable fried rice costs only 3.55. For dinner, try the Buddha s basket with precious nuts - seasonal mushrooms and diced vegetables sauteed with peanuts, walnuts and pecans. The pan-fried rice noodles are also recommended. For dessert, the hot peanut pudding is flavorful and unique. Order the large and share among friends. 

The restaurant is perfect for a noon-time getaway - try the homemade dal, a lentil soup with loads of onions and mustard seeds. The chapati roll-up is a good deal at 4.95 - whole wheat flat bread stuffed with the curry of the day, lettuce, carrots, cucumbers, red cabbage and bean sprouts, complemented with your choice of one of the many house dressings. (The sesame herb was my favorite.)...

Acidification of mung bean sprouts with acetic, citric, gluconic, lactic or malic acid enhanced texture (35). Treatment of mung bean sprouts with acetic acid was detrimental to flavor. The best acidified mung bean sprouts were obtained by acidification with gluconic acid (35).
