Water chestnuts

Most nuts for commercial use are characteri2ed by high oil and protein contents (see Proteins) as well as a low percentage of carbohydrates (qv). However, some varieties, mostly inedible tree nuts such as acorn, horse chestnut, and chufa, contain at least as much sugar and/or starch as protein. The edible water chestnut is also in this category, as is the cashew nut, which contains starch in addition to a rich store of oil. The proximate composition of a number of nuts and of some nut products are given in Table 2 (3).

Trapa natans (family Trapaceae) Commonly known as water chestnut and distributed in the tropics but predominantly in South and South-East Asia. Fruits are large and black. It is eaten after cooking and usually cultivated in the region of distribution.

Vegetables and fruits. Many of the vegetables and fruits eaten today had their origin in specific areas or countries where they became an important component of the diet. Chinese cabbage, eggplant, rhubarb, soybean, and water chestnut came from China. The cowpea, okra and yam came from Africa, while the beet, carrot, lentil, onion, and turnip came from Asia. Corn, beans, potatoes and tomatoes are New World vegetable crops.

Eleocharis tuberosa. The milky juice (51) of crushed Chinese water chestnuts inhibits S. aureus, E. coli, and Aerobacter aerogenes when used in the cylinder-plate method. It is a fairly thermostable substance insoluble in organic solvents. It may be inactivated by hydrogen sulfide.
