Subsequently, a clear Juice is obtained by ultrafiltration. A serious problem in this process is the fouling of the ultrafiltration membrane, causing a reduced flux rate. For apple processing, the material responsible for this effect has been isolated and extensively characterized [2-4]. It appeared to consist mainly of ramified pectic hairy regions (MHR), which were not degraded by the pectolytic enzymes present in the technical pectinase preparation. [Pg.232]

In apple processing, enzymatic treatment of the crushed fruit leads to a lower degree of degradation of the peel and the core than the rest of the fruit. Figure 1 shows the separate tissue zones in diagrammatic form. Their anatomic origins are different the epidermis and outer parenchyma zones are tissues derived from the fusion of the calyx, corolla and stamens of the flower the inner zones correspond to tissue derived from ovaries and carpels. It has been found that the flavor of fmit can be increased by a process called precursor atmosphere (PA) (77). When apples were stored in a controlled atmosphere containing butyl alcohol [71-36-3] the butyl alcohol levels increase by a factor of two, and the polar products, butyl ester, and some sesquiterpene products increase significantly. A rack and frame press uses heavy nylon cloth positioned in a wooden frame inside a rack. A measured amount of apple or other fmit mash is added from a hopper above the frame. The mash is leveled with a hand trowel and the edges of the nylon cloth are folded over the mash to encase it and create a cheese. The frame is removed, and a second rack is placed on top of the first cheese the process is repeated until a stack of cheeses is prepared. A hydrauhc ram then appHes gradually increa sing pressure on the stack and expresses the juice. A high yield of juice (80%) is obtained and no press aid is required. Because this process is labor intensive (17), it is mostly used for small farm and pilot-plant operations. [Pg.572]
