Barley is an important crop, with the best quality grains sold for malting and the remainder used for feeding all classes of stock, especially pigs, dairy cows and intensively fed beef. Barley straw can be used for bedding and as a maintenance ration. Barley is a shallow-rooted crop which grows well on chalk and limestone soils, with a preferred pH of 6.5. Its place in the rotation can be when soil fertility is low, which means that it can follow a previous cereal crop such as wheat. [Pg.88]

Food products may include frozen produce, canned produce, pasta, sauces in jars, prepared meals or pizzas. It is important to work closely with the manufacturer, in working out the best types of ingredients to use, depending on the manufacturing facilities available. For example, frozen fruit and vegetable processors require a specific size and quality, pasta and bread manufacturers will have their specific requirement of the variety and grade of wheat. They require consistent quality and volume so as to be able to produce a consistent end product. As with restaurants, it is important to build a good relationship with your processor and to keep the manufacturer informed of any potential problems. One property of the flour that is controlled by the miller is the extraction rate. Wholemeal flour has a 100% extraction rate, with brown, white and patent white having progressively reduced extraction rates. One obvious difference is the colour. Another is that the quality of the protein increase towards the middle of the wheat berry from which patent flour is produced. Thus, patent flour is sometimes used not to produce whiter bread but in products like hlo pastry or West Indian patties where the strength that patent flour gives is important and the colour is irrelevant. [Pg.60]

This observation has become an important contributor to the development of rapid, automatic scanning of outer tissues of grains (primarily bran tissues) which contribute both strong color and taste characteristics to grain products such as wheat flour. The ability to measure both the concentration and distribution of such components is paramount to quality control in bakeries, and to definition of raw materials. Cereal grains, such as maize, barley, wheat and sorghum, are the main ingredients of poultry diets and usually provide 30-60% of the total AA requirements. Other sources of protein such as soybean meal and canola meal must be provided to ensure adequate amounts and a proper balance of essential AAs. The protein levels necessary to provide adequate intakes of essential AAs will depend on the feedstuffs used. Feedstuffs that contain high-quality proteins (i.e. with an AA pattern similar to the bird s needs) or mixtures of feedstuffs in which the AA pattern of one complements the pattern in another will meet the essential AA requirements at lower dietary protein levels than feedstuffs with a less desirable AA pattern.
