The CGTase action was evaluated on cassava starch, sweet potato starch, com starch, and waxy com starch. Substrates concentrations were at 2.5%. Enz5mie, conditions, and quantity were conducted as described above, except that aliquot samples were withdrawn periodically until 24 h. In an independent experiment, starches were gelatinized by autoclave process. Commercial starch is mainly com starch, but smaller amounts of sorghum, wheat, and potato starch are also produced. In 1992, 1303 million bushels (45.8 X 10 m ) of com were ground for starch and other products (120) 1 m com weighs - 721 kg and yields 438 kg starch, 26 kg oil, and 142 kg combined gluten and hulls. One of the more recent innovative approaches was to look for new micro-organisms and novel carbohydrate substrates. The early fermentations used sugar beet or cane molasses, various syrups, sweet potato starch or glucose itself and the micro-organism was always an Aspergillus spp. In the early 1930 s it was found that yeasts would produce dtric add from acetate. Since then a variety of yeasts, prindpally Candida spp., has been shown to convert glucose, w-alkanes or ethanol to dtric add with great effidency. [Pg.126]

In The Netherlands, the production of potato starch in factories began in Gouda for the purpose of converting it to syrup. Jacobus Hendrikus van de Wetering was able to build on the invention of Kirchhoff (Chapter 21) and received permission to construct a syrup factory in Gouda in 1819. [Pg.512]

Some methods available offer the use of am-yloglucosidase alone. Work done with com and potato starches illustrated that even vmder ideal conditions amyloglucosidase does not fully convert starch to dextrose, although the shortfall is small. The limit dextrin was more noticeable in corn starch hydrolysis. Proof was obtained by studying the reaction kinetics, and analyzing the hydrolysates by ion chromatography using pulsed amperometric detection. There remained always a small amount of a limit dextrin, and in the case of potato starch some other low molecular mass residues. [Pg.461]
