Ester synthesis of fatty acid ethyl ester. The lipase-catalyzed esterification of fatty acid and alcohol is well-known. It was also favorable for the esterification of poly unsaturated fatty acids under mild conditions with the enzyme. However, the activity of native lipase is lower in polar organic solvents, i.e. ethanol and methanol. The synthesis of Ae fatty acid ethyl ester was carried out in ethanol using the palmitic acid-modified lipase. Dairy phospholipids are important structurally, because they are able to stabilise emulsions and foams, and to form micelles and membranes (Jensen and Newburg, 1995). Phospholipids also have the potential to be pro-oxidants, because they contain mono-unsaturated and poly-unsaturated fatty acids and have the ability to attract metal ions. Phosphatidyl ethanolamine binds copper strongly and is believed to be important in copper-induced oxidation in milk (O Connor and O Brien 1995 Deeth, 1997). The polyunsaturated fatty acids and metal ions accelerate lipid oxidation, especially when heat is applied hence, phospholipids can be degraded during the processing of milk. However, in dairy products, the situation is complex and it appears that phospholipids are able to act as either pro-oxidants or antioxidants, depending on the pH, ratio of water and phospholipid species (Chen and Nawar, 1991). [Pg.20]

Oxidation Stability (OSI or Rancimat) has been introduced in many ways. In EN14214 it exists as OSI and as a maximum acceptable Iodine Value, or maximum level of linolenic acid or of poly-unsaturated fatty acids. Glycerophospholipids (PL) are abundant lipid components found in Nature [1]. Most vegetable oils, fish oil and egg yolk are particularly rich in mixtures of phospholipids. They are characterized by the presence of a polar head and two fatty acid chains in the apolar part of the molecule. The two acyl chains mainly consist of saturated fatty acid residues in the snl position and mainly (poly)unsaturated fatty acid chains in the sn2 position. Mixtures of phospholipids at low cost are obtained from the degumming process of vegetable oils. Lecithin, the main component of the mixture, has the polar head characterized by the choline residue. It is usually defined as phosphatidyl choline (PC) and it is understood that the composition of the apolar part is composed of mixtures of fatty acid residues dependent to a large extent on the source of the raw material (fatty acid chains composition of PC from soy beans palmitic 11.6%, stearic 3.4%, oleic 4.6%, linoleic 66.4%, linolenic 8.7%). Scheme 1 shows a PC with two defined acyl chains at the glycerol backbone l-palmitoyl-2-linoleoyl-5n-glycero-3-phosphocholine (PLPC). [Pg.128]

The variety of protein oxidation products of whole polypeptide chains is therefore the result of the variety of 20 amino acids present in the proteins and the various free radicals interacting with the protein. In more complex biological systems the term secondary oxidative protein modification indicates the modification of proteins by a compound resulting from oxidation processes in other parts of the cell. For example, the oxidant attack on poly-unsaturated fatty acids in cells produces a number of reactive aldehydes that readily modify proteins.
