Paper chromatography is extensively used to follow the progress of the malolactic fermentation and the simplicity of this method is such that practically all wineries can carry it out. It is based on the difference in R values between malic and lactic acids using a mobile phase consisting of acetic acid and butanol. Bromothymol blue is incorporated into the mobile phase as indicator and thus the acids appear as yellow spots on a blue background. The absence of a spot for malic or lactic acid indicates that the MLF has or has not, respectively, taken place. [Pg.1544]

The decolorization of Poly B-411 was followed by the decrease in absorption at 596 nm. For the electrochemical decolorization of Poly B-411 in the presence of veratryl alcohol, a two-compartment cell was used. The decolorization of Poly B-411 was followed by the change in absorbance at 596 nm and the simultaneous oxidation of veratryl alcohol was followed at 310 nm. The same electrochemical apparatus was used for the decolorization of Poly B-411 adsorbed onto filter paper. A practical technique for lactic acid fermentation of potato pulp has been developed (Oda et al., 2002). They screened 38 strains of the fungus Rhizopus oryzae either lactic acid or fumaric acid and ethanol were formed, and the ratio differed among the strains tested. Saito et al. (2003) studied the effect of pectinolytic enzymes on lactic acid fermentation of potato pulp by different Rhizopus oryzae NRRL 395 and NBRC 4707 strains. When a commercial preparation of pectinase was added to potato pulp inoculated with fungal spores and incubated for 7 days, both strains effectively produced larger amounts of lactic acid and ethanol. These data indicated that the fermentation of potato pulp depends on the degradation of pectic substances in NRRL 395 and NBRC 4707. Saito et al. (2006) evaluated the potato pulp obtained in different seasons and found pectin content to be dependent on the dates of extraction. [Pg.455]
