Ethyl palmitate

C12 to C20, primarily Ci6 to ( is), used as surface lubricants in the manufacture of food-contact articles. The method, which uses ethyl palmitate (Eastman Chemicals No. 1575 Red Label) as an internal standard, has been validated at 200 ppm total FAME [185]. Other FAME standards (methyl palmitate, methyl stearate, methyl oleate, methyl linoleate and methyl linolenate) are available (Applied Science Laboratories) [116], Worked out examples of additive determinations are given in the Food Additives Analytical Manual [116], which also describes a great many of indirect food additives, such as BHA, BHT, TBHQ, l-chloro-2-propanol, DLTDP, fatty acid methyl esters, w-heptyl-p-hydroxybenzoate, propyl-gallate, sodium benzoate, sodium stearoyl-2-lactylate, sorbitol and phenolic antioxidants. Another difference between bulk and monolayer oxidations was observed in the amounts of alkanes and alkenes produced. In bulk, the alkanes in ethyl palmitate heated for 1 hr at 180°C were greater than the 1-alkenes, indicating that hydrogen abstraction is the preferred route for termination of the alkyl radicals which are formed by hydroperoxide scission. The reverse was true in the ordered state. Restriction of the alkyl radicals limits abstraction of hydrogen from other substrate molecules to form alkanes thus favoring the production of 1-alkenes (Hau, L. B. Nawar, W. W. Alexander and Rideal (30) found that the hydrolysis of a monolayer of ethyl palmitate on alkali became unusually slow as the reaction proceeded. They suggested that the reason for this decrease in rate lay in a reduced concentration of hydroxyl ions at the surface due to repulsion by the negative charge upon the interface, for which the palmitate ions formed in the saponification were responsible. [Pg.37]
