Despite some conflicting evidence (Kinsella and Fox, 1986), it appears that denaturation has little influence on the amount of water bound by whey proteins. However, other factors which may accompany denaturation (e.g. Maillard browning, association or aggregation of proteins) may alter protein sorption behaviour. Drying technique affects the water sorption characteristics of WPC. Freeze-dried and spray-dried WPC preparations bind more water at the monolayer level than do roller-, air- or vacuum-dried samples, apparently due to larger surface areas in the former. As discussed above, temperature also influences water sorption by whey protein preparations. The sorption isotherm for /Mactoglobulin is typical of many globular proteins. [Pg.228]

Potatoes are first cooked, and the pulp is spread by rollers over the surface of large steam heated drying drums. Bituminous coal and all kinds of granular material are handled in tubular dryers. Soap is dried when in pieces in chamber dryers, and soap flakes are handled on ribbon dryers at low temperature. A special setup is used for manufacture of a three-layered inhibited film whose middle layer is embossed and the cells are filled with a non-drying inhibiting composition (Fig. 2.14). In particular, a microporous poly(/-lactide) (PLLA) composition can be prepared using poly(styrene) (PS) and as compatibilizer a copolymer from a lactide and styrene. Binary blends and compatibilized ternary blends are prepared by melt mixing the polymers and copolymer in a Brabender internal mixer with roller blades, under a constant high flow of dry nitrogen.
