Moisture. In relatively pure sugar solutions, moisture is deterrnined as the difference between 100 and Brix. In crystalline products, it is usually deterrnined by loss-on-drying under specified conditions in an oven or by commercial moisture analyzers that have built-in balances. Moisture in molasses and heavy symps is deterrnined by a special loss-on-drying technique, which involves coating the sample onto sand to provide a greater surface area for oven drying. The result of this test is usually considered dry substance rather than moisture. [Pg.11]

Active dry yeasts of improved quality have been available for many years, and more recently instant active dry yeast has been introduced (15,20). This instant yeast exhibits more activity than regular active dry yeast due to improved drying techniques, and can replace compressed yeast at a rate of 33 —40%. Dried yeasts, which are stable for long periods of time at room temperature, are of interest to bakers because of the high distribution cost of fresh compressed yeast. One of the most widely used spray-drying techniques for coffee extract involves spraying percolated coffee extract at 40°F into the top of a baffled tower of hot air at 480°F initially.
