Drum Drying. The dmm or roHer dryers used for milk operate on the same principles as for other products. A thin layer or film of product is dried over an internally steam-heated dmm with steam pressures up to 620 kPa (90 psi) and 149°C. Approximately 1.2—1.3 kg of steam ate requited per kilogram of water evaporated. The dry film produced on the roHer is scraped from the surface, moved from the dryer by conveyor, and pulverized, sized, cooled, and put iato a container. [Pg.366]

Viscometer test. Typical crosslinked starches are obtained when the initial rise of the viscosity of the product is between 104° and 144° C, and the viscosity of the product does not rise above 200 Brabender units at temperatures less dian 130° C. The crosslinked starch slurry is then drum-dried and milled to obtain a dry product. The effectiveness of the product is checked by the API Fluid Loss Test after static aging of sample drilling fluids containing the starch at elevated temperatures. Amino Acid Content. Amino acid content of field pea products is related to protein level, method of processing, and fraction (starch or protein). The protein fraction contains fewer acidic (glu, asp) amino acids than the starch fraction and more basic (lys, his, arg) amino acids than the starch fraction. Also, there are more aromatic (tyr, phe) amino acids, leu, iso, ser, val, and pro in the protein fraction than in the starch fraction (5). An amino acid profile of pea protein concentrate shows relatively high lysine content (7.77 g aa/16 g N) but low sulfur amino acids (methionine and cystine) (1.08-2.4 g aa/16 g N). Therefore, it is recommended that air classification or ultrafiltration be used because acid precipitation results in a whey fraction which contains high levels of sulfur amino acids (12,23). Vaisey et al. ( ) evaluated the performance of fababean and field pea concentrates as ground beef extenders. Sensory attributes of broiled meat patties containing the protein concentrates were more acceptable to taste panelists when these products were added as texturized flakes than as flour. The extended products had significantly less drip loss than all-meat controls but had softer textures.
