In the UK the Joint Food Science and Safety Group of the Department of Health and the Ministry of Agriculture, Fisheries and Food have published the results of many analyses for chemical contaminants in food carried out under their Food Surveillance Programme. In many cases the raw data from these surveys are available for analysis. Table 2.1 lists the results of analyses for lead in some samples of cow, sheep and pig kidney obtained in Scotland and England.5 There are clear differences between species and some evidence of differences between sampling locations. What is not clear is the extent to which the variability observed is due to real and consistent differences between species and location or to normal biological variation.

In the UK, the Ministry of Agriculture, Fisheries, and Food and the Department of Health have conducted four sets of food consumption surveys between 1983 and 1997. These surveys make up the UK s National Diet and Nutrition Survey (NDNS) program. The UK has conducted surveys for infants [15], schoolchildren [16], adults [17], and most recently, yoimg people [18]. The food consumption information from these surveys is used for the various UK dietary exposure models, including the TMDI and the NESTI calculations. Elsewhere in the EU, dietary risk assessments may be based upon national food consultation surveys, such as the German data [20], or upon the regional diets...

Under the Medicines Act 1968, the Licensing Authority is the Minister of Health, the Secretary of State for Health in Scotland, the Minister of Health and Social Services for Northern Ireland, the Minister of Agriculture, Fisheries and Food, the Secretary of State for Agriculture in Scotland and the Secretary of State for Agriculture in Northern Ireland. The day-to-day administration of the Act for human medicines was delegated to the Medicines Division of the Department of Health and Society Security (DHSS) and was managed jointly by an Under Secretary and the Professional Head of the Division, who held the rank of Senior Principal Medical Officer.

The distribution of merciny in seawater has been measured by a number of workers and their results are shown in Table VI which is based on the excellent reviews by Jones (1975) and Steering (1976). As can be seen from this table, the reported values range over three orders of magnitude and some of the high levels, e.g., Carr et al. (1974), should be harmful to marine animals. However, unpublished work by the Ministry of Agriculture Fisheries and Food laboratory at Lowestoft (Hamilton Dock) and the Department of Agriculture for Scotland laboratory at Aberdeen has indicated that only a proportion of this mercury...
