The modified Ames mutagen assay was used to investigate the mutagenic potential of nitrosated fru-trp, a fru-trp control, and a nitrite control incubated in solutions under mild conditions (37°C, pH 4, 24 h). Figure 1 shows dose response curves obtained with S. typhimurium TA98 and TA100. Nitrosated fru-trp demonstrated a positive dose-response relationship with both tester strains in the absence of S-9 mix and a somewhat reduced dose-response relationship in its presence.
