The production of Vin Santo over the years has become an increasingly specialized market, which is still characterized by both low production and few producers. Although sales of Vin Santo are not quantitatively comparable to those of the majority of wines, production of Vin Santo has increased significantly over the past decade, following the general increase in demand for sweet wines. From market surveys and from data from the major wineries, it has been estimated that in the period 2000-2005 the demand for sweet wines increased by 20% (Scienza, 2006). The demand to date has remained high, and market analysts expect a further medium term increase especially for the more specific productions.
