The function of an antioxidant is to retard the oxidation of an organic substance, thus increasing the useful life or shelf life of that material. In fats and oils, antioxidants delay the onset of oxidation or slow the rate of oxidizing reactions. Oxidation of lipids chemically produces compounds with different odors and taste and continues to affect other molecules in the food. The main purpose of using an antioxidant as a food additive is to maintain the quality of that food and to extend its shelf life rather than improving the quality of the food. Figure 1 illustrates how antioxidants can affect the quality maintenance of food in terms of oxidative rancidity... [Pg.472]

Thus, although our analysis is preliminary, the differences that neonates detect and respond to behaviorally could very well be due to differences in relative quantities of constituents rather than their presence or absence. It is interesting that, even though B. constrictor and C, v. viridis are relatively distant taxonomically and live in vastly different habitats, there has been surprising conservativism in skin lipid structure during their evolution. It is possible that skin lipid chemical structure has remained relatively constant to maintain its apparent primary function, controlling CWL (Roberts and Lillywhite, 1980 Landmann, 1979, 1980), and that lesser changes have occurred to enhance pheromonal functions or effects in taxa where necessary selective pressures have existed. [Pg.299]

A wide variety of products can be produced by fermentation. In some cases the microorganism itself is the product, for example, in the manufacturing of active dry yeast (ADY). Well-known pharmaceutical fermentation products are insulin and penicillin G. Fermentation processes are also used to produce various commodity bioproducts like organic and amino acids, polysaccharides, lipids, chemical compounds like isoprene (Whited et al., 2010), 1,3-propanediol (Nakamura and Whited, 2003), RNA, DNA, enzymes, and other proteins. The large variety of commodity bioproducts produced by fermentation requires an equally large variety of different methods to separate and purify them. Compared to fermentation processes, where usually one unit, the fermenter vessel, is used, several different steps and unit operations are necessary to achieve purification and formulation of bioproducts. [Pg.148]

In membranes with fixed lipid area, but variable number of lipids, the bare tension Fq is simply proportional the lipid chemical potential. For membranes with fixed number of lipids and variable lipid area, the physical meaning of Fq is less clear, but it can still be defined as a field that is conjugate to A in a Lagrange multiplier sense. This term also gives rise to a <7 term in the undulation spectrum, with the fluctuation tension Ftiuc = Fq + [36]. [Pg.250]
