Dietary deficiency diseases are those whose major features are due to the lack of one or more nutrients. They are often characterized by specific signs of abnormalities, such as discoloration of the hair or skin, bleeding gums, swollen glands, etc. one of the major causes of such diseases is the consumption of a diet which does not contain sufficient amounts and varieties of foods. For example, young children fed mainly cereals in the form of watery gruels may develop either protein-energy malnutrition, and/or blindness, due to vitamin A deficiency.

Deficiency in vitamin C leads to the disease scurvy due to the role of the vitamin in the post-translational modification of collagens. Vitamin C is readily absorbed and so the primary cause of vitamin C deficiency is poor diet and/or an increased requirement. The primary physiological state leading to an ihcreased requirement for vitamin C is severe stress (or trauma). This is due to a rapid depletion in the adrenal stores of the vitamin. The reason for the decrease in adrenal vitamin C levels is unclear but may be due either to redistribution of the vitamin to areas that need it or an overall increased utilization. 

Efficiency in vitamin C, unlike the case with most vitamins, is associated with a specific disease. This disease is scurvy. The symptoms of scurvy include swollen or bleeding gums and hemorrhages under the skin. These symptoms occur when the body s ascorbate is depleted to the point where plasma ascorbate levels are under 0.2 mg/100 mi. Controlled studies with human subjects revealed that symptoms of the disease may develop within 4 weeks with the consumption of an ascorbate-free diet. Scurvy is rarely encountered in developed countries, though it may occur in chronic alcoholism. The disease in humans may be prevented by consuming 10 to 15 mg ascorbic acid per day.
