The Austrian organic food market is more advanced than the UK because of the domination of the market by multiples who account for 80% of all organic food sales, compared with 35% in Holland and as low as 10% in Spain. In Austria, organic food purchase now accounts for nearly 10% of all food purchases. Multiples play a key part in organising and developing the market for organic meat (European Natural and Organic Food and Drink 1999). [Pg.103]

Holland, by comparison, has been supplied with organic fresh meat by a network of specialist organic butchers all purchasing from a central abattoir to provide continuity of supply and standards.
