The 50%-strength liquid tannin products are particularly viscous, and some sediment is to be expected because of limited solubility of certain constituents at high strength (ellagic acid ). Tannins stored in drums should be mixed before use or before transfer into a day tank. 

Other topical bleaching agents include arbu-tin, licorice, unsaturated fatty acids, soy extracts, serine protease inhibitors, ellagic acid and resveratrol.

Some phenolic acids such as ellagic acid can be used as floral markers of heather honey (Cherchi et al., 1994 Ferreres et al., 1996a,b), and the hydroxyciimamates (caffeic, p-coumaric, and ferulic acids) as floral markers of chestnut honey (Cherchi et al., 1994). Pinocembrin, pinobanksin, and chrysin are the characteristic flavonoids of propolis, and these flavo-noid compounds have been found in most European honey samples (Tomas-Barberan et al., 2001). However, for lavender and acacia honeys, no specific phenolic compoimds could be used as suitable floral markers (Tomas-Barberan et al., 2001). Other potential phytochemical markers like abscisic acid may become floral markers in heather honey (Cherchi et al., 1994). Abscisic acid was also detected in rapeseed, lime, and acacia honey samples (Tomas-Barberan et al., 2001). Snow and Manley-Harris (2004) studied antimicrobial activity of phenolics.

The optimized RPLC UV-Vis ESI MS method for all typical blue colourants (indi-goids, hematein, tannins, anthocyanins and selected flavonoids) was used for the identification of dyes extracted from a thread taken from an Italian tapestry of unknown origin from the collection of the National Museum in Warsaw (Poland). It was found that to obtain the red-blue colour of the fibre a mixture of dyestuffs was probably used. The presence of indigotin, tannic and ellagic acid (at m/z 301, NI), as well as carminic acid, suggested the use of indigo and cochineal. Reseda luteola could also have been used due to the presence of luteolin and apigenin.

Other analytical assays proposed for the quantification of hydrolyzable tannins in plant materials include the rhodanine assay for the estimation of gallotannins (Berardini and others 2004) and sodium nitrate for the quantitative determination of ellagic acid (Wilson and Flagerman 1990).

The differences between castoreum from different species and sources still need to be investigated. As suggested by Tang et al [69] it is quite likely that these differences could be diet related because the phenols are most likely derived from the diet of these animals. Indeed, already in 1949 Lederer [73] recognized this possibility and pointed out that 2, 3"-dihydroxydibenz-2-pyrone and 4,4 -dihydroxydiphenic acid dilactone 12 (Fig. 3) are closely related to ellagic acid, which is abundant in the bark of trees. A comprehensive chemical analysis of the polyphenols present in the preferred diet of the beavers and a comparison of these compounds with the phenols present in castoreum from animals fed exclusively on this diet could shed some light on this unresolved problem. 

Dry heat treatment of oak resulted in a decrease in the amount of ellagitannins and a simultaneous increase in ellagic acid the lignan lyoniresinol was unaffected by heat treatment... 

In the adsorption of some metal ion by tannin adsorbents [16], tannins are widely distributed in nature and have multiple adjacent phenolic hydroxyl groups and exhibit specific chelation ability toward metal ions [17]. According to the chemical stractures of tannins, they can usually be classified into hydrolyzable tannins, condensed tannins and complex tannins. Hydrolyzed tannins yield galhc acid or ellagic acid when hydrolyzed by acid, base or some enzymes [18]. Turkish sumac tannin (hydrolyzable tannin) is illustrated in Fig. 28.1 whose basic stracture is of flavan-3-ols.
