It is clear that the LMW fraction from the glucose-lysine reaction mixture affected, down to a concentration of at least 0.25 mg/ml, the rates of hydrolysis catalyzed by some, but not all, of the enzymes involved in protein digestion in vitro. Car-boxypeptidase A and aminopeptidase N were inhibited by a number of substances in the mixture, some being more effective than others. Efforts to characterize these compounds are in progress.

Bovine haemoglobin, the protein from erythrocytes which occurs as a minor component in meat and meat products, is also a precursor of opioid peptides (haemorphins). These opioid peptides are released by pepsin digestion in vitro and may also be produced by macrophages. Moreover, haemorphins have been found to decrease the tension of the guinea pig ileum in vitro (Nyberg et al., 1997). 

Physiological accessibility of the essential amino acids also influences quality. Alkali-treated proteins have been shown to have reduced digestibility in vitro (7,49,76) and in vivo (49, 62) and to produce symptoms of dietary inadequacy such as poor growth, hair loss, and diarrhea (34, 54, 75).

Cobalt, while essential at low levels for vitamin Bi2 synthesis and efficient functioning of rumen microflora, will depress cellulolytic activity of rumen microflora in vitro at levels of 12 p.p.m. and above (35). Selenium inhibited cellulose digestion in vitro at the 0.3 p.p.m. level (24).
