Center for Food Safety and Applied Nutrition (CFSAN). This center is responsible for the regulation and approval of food for human consumption, food additives, color additives, and cosmetics. Although CFSAN does not regulate meat and poultry, it does set safety and sanitation standards for supermarkets, restaurants, and other retail food establishments.

Foods and Veterinary Medicine The FDA s Center for Food Safety and Applied Nutrition (CFSAN) and Center for Veterinary Medicine (CVM) actively participate in the development of international standards by the Codex Alimentarius Commission (Codex). Codex is an international organization formed in 1962 to facilitate world trade in foods and to promote consumer protection. It is a subsidiary of two United Nations components, the Food and Agriculture Organization (FAO) and the WHO. Codex standards cover food commodity standards (similar to FDA standards of identity), food additives, food contaminants, and residues of veterinary drugs in food. FDA officials chair two Codex committees, the Food Hygiene Committee and the Residues of Veterinary Drugs in Foods Committee, and participate in many others. 

The Redbook 2000 provides guidance for the safety of food ingredients, and is produced by the US Food and Drug Administration (FDA), Center for Food Safety and Applied Nutrition (CFSAN). The first part of this guidance was issued in July 2000. It is available electronically at the website listed at the end of the article. 

The US Food and Drug Administration Center for Food Safety and Applied Nutrition (CFSAN) has monitored reports of adverse reactions to sulfites since 1980. As of June 1999, CFSAN has received 1132 consumer complaints describing adverse reactions thought to be due to the ingestion of foods with sulfites. Out of 799 reports with adequate information about the intensities of the reaction, 388 (48.6%) were classified as severe.
