Boxes hard water

Low methoxyl pectins have radically different properties, i.e. a small chemical modification has totally altered the way in which pectins behave. The low methoxyl pectins are set by calcium ions independently of the pH. Because hard water normally contains calcium ions care must be taken in selecting low methoxyl pectins when using hard water supplies or when moving recipes between factories. The gel produced in low methoxyl pectins has the egg box structure found in alginates (see Figure 6). [Pg.126]

Scale is a rock-hard crust that can form in pipes and pots that are used with hard water. Before the general availability of household water softeners, scale was a much more common experience. Insoluble scale forms from calcium ions when carbonate ion is present. This fact highlights, once more, the versatility of carbonates. We have seen carbon dioxide form carbonates and hence carbonic acid in water we have used sodium bicarbonate (baking soda) as a base and finally we have pointed out that carbonates can make fairly insoluble solids. These many talents of the carbonate ion make baking soda good for more than cooking. Baking soda makes an excellent deodorizer because it can react with both acidic and basic smelly compounds and can form nonvolatile, and hence non-smelly, compounds with many more. Permanent hardness is caused by other Mg and Ca " " salts (e.g. sulfates). The process of water softening involves passing the hard water through a cation-exchange resin (see Section 11.6). Washing-machine detergents contain builders that remove Mg and Ca ions from washing water. The simulation of a first-order phase transition, especially one where the two phases have a significant difference in molecular area, can be difficult in the context of a molecular dynamics simulation some of the works already described are examples of this problem. In a molecular dynamics simulation it can be hard to see coexistence of phases, especially when the molecules are fairly complicated so that a relatively small system size is necessary. One approach to this problem, described by Siepmann et al. [369] to model the LE-G transition, is to perform Monte Carlo simulations in the Gibbs ensemble. In this approach, the two phases are simulated in two separate but coupled boxes. One of the possible MC moves is to move a molecule from one box to the other in this manner two coexisting phases may be simulated without an interface. Siepmann et al. used the chain and interface potentials described in the Karaborni et al. works [362-365] for a 15-carbon carboxylic acid (i.e. pen-tadecanoic acid) on water. They found reasonable coexistence conditions from their simulations, implying, among other things, the existence of a stable LE state in the Karaborni model, though the LE phase is substantially denser than that seen experimentally. In terms of organic carbon generation, the coccolithophorids are a minor player, representing only 6 to 8% of global marine primary production. But their detrital remains contribute disproportionately to the burial of carbon in marine sediments. This is due to near complete loss of POC via remineralization as the detrital hard and soft parts settle to the seafloor. As estimated from Broecker s Box model in Chapter 9, only about 1% of the POM that sinks out of the surfece water is buried in marine sediments. Now we want to apply the box model approach to a two-box system which consists of a completely mixed water body in contact with a sediment box. Although the sediment column can hardly be visualized as being completely mixed, the concept of a surface mixed sediment layer (SMSL) introduced in the previous section is an approximate view of the sediments as mixed box. Alkalinity and hardness (dissolved Ca24 and Mg2+, Box 12-3) are important characteristics of irrigation water. Alkalinity in excess of the Ca2+ + Mg2+ content is called residual sodium carbonate. " Water with a residual sodium carbonate content equivalent to 2.5 mmol H+/L is not suitable for irrigation. Titanium tetrachloride will indicate 10 ppm or more of water by the appearance of a vapor cloud. Hygrometers are also available, but the expense hardly seems justified. These cleaners were more effective than their predecessors, but they also required a large amount of rinsing. The builders, which boosted cleaning efficacy, also increased the amount of residue left behind when the cleaning solution dried on a surface.
