Bilberry, Vaccinium

A biphasic solvent system composed of tert-butyl methyl ether, -butanol, acetonitrile, and water (2 2 1 5) acidified with triflnoroacetic acid has been applied to fractionate anthocyanins. The npper (organic) phase acts as the stationary phase and the lower (aqneons) as the mobile phase. HSCCC has been applied to obtain several anthocyanin fractions from wine, red cabbage, black cnrrants, chokeber-ries, " bilberries (Vaccinium myrtillus) acylated anthocyanins, and also isolate individnal anthocyanins from wine. ... [Pg.488]

About 15 anthocyanins in bilberries (Vaccinium myrtillus L.) were reported by Ichiyanagi et al. using CZE separation and MS-NMR identification.Anthocyanin analysis of strawberry and elderberry extracts was performed by reverse HPLC at pH 1.8 and CZE using a standard silica capillary and pH 8.0 running buffer. Under these conditions, HPLC had more advantages than CZE in terms of anthocyanin separation in these extracts." ... [Pg.490]

Chrysanthemin (asterin, "cyanidin-3-0-/3-glucopy-ranoside). CjiHjiO,", Mr 449.39, as chloride metallic shining, red-brown platelets or prisms, mp. 205 °C (decomp.). C. belongs to the "anthocyanins and occurs, e. g., as pigment in asters (Aster, Asteraceae), chrysanthemums (Chrysanthemum, Asteraceae), elderberries (Sambucus, Caprifoliaceae), blackberries (Rubus, Rosaceae), bilberries (Vaccinium, Ericaceae), blood oranges (Citrus, Rutaceae), peaches (Prunus persica, Rosaceae), or in the red autumn leaves of some maple species (Acer, Aceraceae). [Pg.131]

Banana flavor Of the 350 flavor compounds identified to date in B. f. 3-methylbutyl acetate as well as 3-methylbutyl butanoate and 3-methylbutyl 3-methyl-butanoate (see fruit esters) are of particular sensory relevance. Fatty-fruity and exotic-fruity notes result mainly from aroma substances with the (Z)-4-config-uration, e.g., Z)-4-hepten-2-one (C7H12O, Mr 112.17, CAS [90605-45-1 ]) and (Z)-4-hepten-2-ol (C7H14O, Mr 114.19, CAS [34146-55-9]), as well as their acetates and butanoates. Eugenol, elemicin (see safrole), and 0-methyleugenol are responsible for the spicy aroma. Bilberry flavor The aroma of the European bilberry (Vaccinium myrtillus) is mainly due to ( )-2- hexenal, ethyl 2- and 3-methylbutanoates (see fruit esters) as well as ethyl 3-hydroxy-3-methylbutanoate (C7H,403, Mr 146.19, CAS [18267-36-2]). [Pg.243]
