Benzoic acid is a by-product of benzoyl peroxide used in the bleaching of freshly milled wheat flour. A maximum benzoic acid concentration of 16 ppm was reported after 12 h of bleaching. The concentration decreased to 6 ppm after 3 months (Saiz et al., 2001).

Aqueous solutions of 2.5% of the sodium salts of organic acids are adequate to maintain the chemical quality and extend the shelf life of fresh salmon with only minor sensory changes during refrigerated storage (Sallam, 2007b). In carcass surface applications 2% lactic, 1.5% acetic plus 1.5% propionic acids are usually applied (Dubai et al., 2004).

Benzoyl peroxide is used as a source of free radicals in many organic syntheses and to initiate polymerizations of styrene, vinyl chloride, vinyl acetate, and acrylics to cure thermoset polyester resins and silicone rubbers in medicine for treating acne and for bleaching vegetable oil, cheese, flour, and fats.
