Alkaline flavour

Mercapto-p-menthan-3-one has been identified as a constituent of Buchu leaf oil [6] and is a very useful substance in black currant and tropical flavours. The reaction of pulegone with hydrogen sulfide in an alkaline medium results in 8-mercapto-p-menthan-3-one formation (Scheme 13.6). [Pg.292]

Ajowan oleoresin prepared from seeds gives a warm, aromatic and pleasing flavour to food products and is used in processed foods, snacks, sauces and various vegetable preparations. Ajowan oil can be treated with aqueous alkaline solution to extract thymol (Pruthi, 2001). Fatty oils produced from ajowan seed have their use in various pharmaceutical and cosmetic industries, are used in the soap industry for flavouring and as a deodorant. They are also used for perfuming disinfectant soaps and as an insecticide. A thymol-free fraction of the oil, known as thymene , finds application in soap perfumes (Malhotra and Vijay, 2004). [Pg.314]

Additionally, there are smoke flavourings produced from the water-insoluble tars through a distillation process [9] and on through an alkaline adsorption/organic extraction of whole smoke vapours [10]. [Pg.299]

Modes of Application.—Internally —Massa Catechu composita Infusum Catechu Tinctura Catechu, or the powder in sufficient gruel or mucilage to mask its astringent flavour. Catechu is likewise given with aromatics to remove flatulency, with opium to allay irritability, and with magnesia or an alkaline carbonate to correct acidily. Externally —The powder Infusum Catechu and, occasionally, Unguentum Catechu. [Pg.69]

Use Various uses include application as caustic, dermatologic, antiseptic and as digestive. Used in the resolution of alcohols. Aq. soln. used as complexing agent in ion-exchange separations of alkaline earth metals. Used in foodstuffs and pharmaceuticals (preservative, flavour, acidulant), plasticisers, mordants. In brewing, manuf. of cheese and confectionery. Depilatory for hides. [Pg.345]

Alkaline TMAf Flavour imparted by accidental admixture of alkaline detergent. (Sodium bicarbonate)... [Pg.486]

Produced by alkaline hydrol. of Streptomycin, S-83. Found in larch trees (Larix decidua), pine needles, chicory. Also from ferns Aracltniodes maximowiezii and Macrotltelypteris torresiana. Used as metal indicator (e.g. for Fe(///)). Flavour enhancer and flavouring agent, used in foods and pharmaceutical formulations. Needles or prisms (toluene or CHCI3) with odour of caramel/butterscotch. Mod. sol. H2O sol. EtOH. [Pg.633]

Esters are derived from carboxylic acids by reaction with alcohols. They have a wide variety of applications ranging from flavouring agents to solvents and explosives. One of the most used painkillers in medication, aspirin, is an ester, while a major class of polymers are the poly(esters). Fats and vegetable oils are naturally occurring esters and the alkaline hydrolysis of such esters (saponification) is used to produce soaps. [Pg.369]
