Tween Sorbitan monostearate

Low-molecular-weight surfactants ( emulsifiers ) are important ingredients in food products. The types of surfactants most commonly studied in food colloids research are phospholipids (lecithin), mono/diglycerides (particularly glycerol monostearate), polysorbates (Tweens), sorbitan monostearate or monooleate (Spans), and sucrose esters. These small lipid-based amphiphiles can typically lower the interfacial tension to a greater extent than the macromolecular amphiphiles such as proteins and certain gums (Bos and van Vliet, 2001).

Gluten was obtained from ProVim, a gluten-enriched flour, by a conventional dough-and-wash procedure (16). Gliadin was separated from the gluten by the method of Jones et al. (17). The surfactants selected for study were Myrj 45 [polyoxyethylene (8) stearate], Tween 60 [polyoxyethylene (20) sorbitan monostearate], Brij 35 [polyoxyethylene (23) lauryl ether], Brij 76 [polyoxyethylene (10) stearyl ether], Brij 78 [polyoxyethylene (20) stearyl ether], and calcium stearoyl-2-lactylate. (Note that the numbers in parentheses indicate the number of monomer units of ethylene oxide.) Working solutions were made up in 70% ethanol at 2.5 mg per 100 ml solution. 

Moreover, they have also shown that a C-12 modified gelatin reduced surface tension more efficiently than a conventional synthetic surfactant such as Tween 60 (ethoxylated sorbitan monostearate). 

Akinc and Celikkaya [169], on the other hand, synthesized yttrium oxide where the stock solution of yttrium (0.25 M) was prepared in a similar way this solution was dispersed in toluene as the continuous phase, containing a dissolved mixture of Span 60 (Sorbitan monostearate) and Tween 80 (the most satisfactory volume ratio was 2 1) as emulsifier. Triethanolamine was used as the precipitating agent, while methanol was used for breaking the emulsion. A standard emulsion formulation had 150 ml of the water phase dispersed in 430 ml of the oil phase, with 10 g of Span 60 and 8 ml of Tween 80. The spherical particles of Y2O3 obtained by calcination at 700 C had a size range of 0.2-2 pm, peaking at around 0.6 pm. In another work, Celikkaya and Akinc [192] destabilized the system after precipitation by addition into acetone.

Polysorbates are surfactants that are pegylated derivatives of sorbitan monoesters (i.e., monolaurate, monopalmitate, monostearate, monooleate, or monoisostearate) or sorbitan triesters (i.e., tristearate or trioleate) and are available in many grades. Finally, certain mild surfactants can also be used as additives, such as sorbitan polyoxyethylene monostearate (Tween 60). These conditioning agents would be effective because they are more rapidly adsorbed on hair than anionic surfactants. Other theories state that the conditioning agents fix themselves during rinsing (strong dilution) or that they surround the surfactant micelles.
