The perishable nature of potatoes limits the market of this raw material to the region of production what is produced in Europe is predominantly consumed in Europe. On the other side, cereals are commodities traded globally and therefore subject to the dynamics of a global market. A recent demonstration of these global dynamics was the temporary shortage of cereal on the market caused, among others, by an increased demand for food coming from China and India, bad weather conditions and the use of cereals as feedstock for bioethanol production. [Pg.239]

Starch is the material used by Nature to store and provide energy for plants in the form of a glucose polymer. It is synthesized and stored by all plants, but it is industrially extracted mainly from cereals and tubers sueh as corn, wheat, potato and tapioca. [Pg.239]

Starch occurs as discrete granules whose size and shape depends on its botanical origin. However, all stareh granules have a semi-crystalline structure, hydrated only to a very small extent, insoluble in cold water, and very dense. [Pg.239]

Amylose has a molecular weight in the range 100,000-1,000,000 Daltons, is only lightly branched and in aqueous solutions assumes the shape of a random coil consisting of helical segments joined by segments with no specific conformation. [Pg.239]

Starch, used in pharmacy, consists of granules separated from the grains or tubers of different higher plants. Starches obtained from different sources may not have identical properties for specific pharmaceutical purposes and, therefore they should not be interchanged in the different formulas. [Pg.14]

Many patented processes are used for the isolation of particular starches and the procedure adopted depends on the desired degree of purity and the nature of the compounds from which the starch has been obtained. The so-called starch plastics offer an interesting alternative for synthetic polymers achieving rapid degradation instead of long-term durability. Starch and its derivatives are also favourable in pharmaceutics being an alternative for microcrystalline cellulose as an excipient intended for the production of pellets via extrusion-spheronization. Dukic et reported the application of a specific grade of modified starch for extrusion-spheronization purposes a crystalline, high-amylose starch formed by gelatinization of amy-lose-rich starches, followed by enzymatic debranching of amylopectin molecules and retrogradation of linear amylose chains, produces a potential candidate.  [Pg.369]


As can be seen, there are differences in performance between the starches and derivatives of different biological origin. Two groups of factors have a significant influence on the choice of the kind of starch used in certain applications economics and performance factors. Starches produced from different sources are not interchangeable in every use. In some applications, a particular kind of starch is preferred, irrespective of price concerns.
