Cherries are normally classed as either sweet or sour. Sweet cherries are eaten straight from the tree and have either white or dark flesh. Skin color also varies from "white," which is actually usually flushed with scarlet, to very dark. Sweet cherries ripen in midsummer, sour cherries ripen slightly later. Sour cherries are grown for culinary use they are juicy but very tart if eaten raw. [Pg.304]

Like plums, cherries may be grown as informal, bushy trees or as fans however, sour cherries have quite complicated pruning requirements (see also below) when grown as a fan. Both may be bought partly trained in the fan form ask the nursery for advice on how to develop and maintain the shape. [Pg.305]

Pick sweet cherries as soon as they are ripe either eat them immediately, refrigerate for a short time, or freeze. Sour cherries do not pull away easily from the tree and may need to be snipped off. Fruit is ready when very dark in color and soft to the touch. It can be used to make jam or wine, preserved in brandy, or cooked for immediate use or freezing. [Pg.305]

Peaches and nectarines are very similar to sour cherries in that they fruit on young wood, and are pruned in a similar way (seep.305). Carry out all pruning between late spring and early fall (see Plums,p.302). [Pg.307]

The typical flavour of sour cherries is produced during processing into wine, liqueur, juice, jam or fruit sauce. Benzaldehyde has been determined to be the most important aroma compound in sour cherries [82], but benzyl alcohol, eu-genol and vanillin are also important flavour compounds (Table 7.2, Fig. 7.5) [83].
